Chicken Pasta and Luncheon Meat Musubi Bento

This is a light lunch so I suggest that you pack more pasta if you have a hearty appetite. To make the pasta:

Boil pasta according to package directions. In a pan, fry chicken pieces or ground chicken (as used here). Add garlic and onions. Allow to cook for a while then add mushrooms. Pour tomato sauce. Add black olives. Season with sugar (if the tomato sauce is too sour), salt, pepper and oregano. Pour cooked pasta and mix until the pasta is coated well with the sauce.

For the luncheon meat musubi, I used Chinese luncheon meat from Purefoods. That's just plain rice. You can use sushi rice for more flavor. I also used a musubi mold. Just press rice into the mold then remove. Top with luncheon meat and wrap with nori. That's it! You now have an Italian, Japanese/Hawaiian inspired lunch!
