This is quite easy to make.
You need:
Purple sweet potatoes
salt and pepper
Olive oil
Herbs of your choice
Let's do this!
1. Preheat the oven at 200C.
2. Peel the purple sweet potatoes. Boil them until soft.
3. On an oven-safe dish, smash the camote.
4. Brush with a generous amount of olive oil. Season with salt and pepper and herbs of your choice.
5. Roast for 20 minutes. If the edges haven't crisped up, increase the temperature to 230C and roast until your desired texture.
