Hectic days, hectic nights. That’s all I’ve been having for months now. We’ve been eating out and taking out and I don’t like it. I want to go back to my kitchen and cook meals that we enjoy and appreciate. So last night, I decided to go home early and let my team take over the store and cook.

Of course I had to make something simple.. and fast! MB was getting cranky because he was hungry.
You will need:
cold rice
butter
Baguio beans
chopped bacon
mushrooms
chopped scrambled eggs
chopped spring onions
S&P
Fry the bacon until crispy. Remove some of the oil (not all of it! you want the flavor to infuse with the rice) and add the chopped Baguio beans and chopped mushrooms. Meanwhile, on another pan, add the cold rice then some butter. Put just enough to give the rice a little color. Add this rice to your bacon and veggie mixture and mix gently. Don’t overmix because you don’t want the starch from the rice make your dish all mushed up. Season with salt and pepper. Finally, top your dish with some chopped scrambled eggs and spring onions. Enjoy with a cold beverage.
For dessert, we had some fruit salad. Yep, that’s homemade too!
