It was around 10 pm. I was hungry and needed something quick. We are night owls and so dinner runs around this time. I had some cooked chicken in the fridge and decided to make a chicken salad. But a sandwich felt too heavy so I made crostini.
This is super easy to make. You just need:
- cooked, shredded chicken
- mayo of your choice
- salt and pepper
- pickles
- apple cubes
- hard-boiled eggs
Toss them together in a bowl and spread on toasted bread! I added some special sauce on top. You can also do that with honey mustard.
I have some leftover spread in the fridge that I use to fuel myself, up quickly in the mornings. Just spread on crackers and my blood sugar is happy.
