Have De Lata, Will Cook: Canned Food, Elevated Featuring Corned Beef 1

Our favorite corned beef

Scenario 1:

You’re a single woman or bachelor living alone.

It’s 7:30 PM.

You’re on your way home.
You pass by the same convenience store you’ve walked into a hundred times before.

You already know what’s inside—
the same fried chicken, the same rice meals, the same things you’ve eaten on days when you were too tired to think.

But tonight feels different.

You don’t want another meal.
You want something that feels like you took care of yourself.

So you reach for the first thing that feels familiar…
a can of corned beef.

Scenario 2:

You’re a working mom.

It’s 7 pm and the kids are hungry. Hubby is arriving from the office any moment now.

You’re tired, but you also don’t want to order another pizza.

You open the cupboard and find two cans of corned beef.

This post isn’t about canned food.

It’s about knowing that even on your most tired days…
you can still feed yourself and your family well.

🥩 Meal 1: Classic Corned Beef with Potatoes

This is where we begin.

Open the can.

Heat the oil in a pan. Add onions if you have them. Or skip if you don’t want them.

Add potatoes if you need to stretch it.

Then add the corned beef.

I also add water to control the saltiness and to keep it moist

If you’re cooking for yourself, you can skip the potatoes. But add them if you want something comforting while watching your favorite Netflix show with your favorite cold beverage on the side.

But if you’re feeding a family, this is where the magic happens—
a few simple cubes turn one can into something that can feed everyone at the table.

Let the corned beef cook until the edges crisp just a little.
Not too much. Just enough.

Or, you can add some water to keep it moist like I did.

Serve it with rice.

That’s it.

Simple. Warm. Enough.

You have a warm, filling, home-cooked dinner in 15 minutes.

Lady E’s Tips

If you’re living alone, one can is enough.

If you’re feeding a family, use two—and let simple ingredients like potatoes help carry you.

No pressure.

No perfection.

Just real food… made in a real life.

But if you want to be a pro at home management, conserve your energy, and save resources, cook 2 cans if you’re single and 2-3 cans if you’re a family.

I’ll tell you why in the next corned beef post.

If you’ve ever stood in front of your kitchen, exhausted, wondering what to cook…

This series is for you.

Because you don’t need more energy.
You just need a way to use what you already have.
