Have De Lata, Will Cook: Canned Food, Elevated (Featuring Corned Beef 2)

Scenario 1:

You live alone.

You work from 9 to 6.

And like your peers, you either take work home or you squeeze in every bit of relaxation you can get from the time you get home until you sleep… sometimes that’s very late into the night.

11 pm. Your tummy starts to grumble.

But it’s too late to cook anything fancy. And you don’t want to wash plates.

You check your fridge. You still have some left over corned beef from the other night that you bought from the convenience store on the way home.

You check what else is in the fridge. Bread.

Scenario 2:

My scenario.

It’s Saturday night. We got home late after a full afternoon of shopping. We ate lunch at 5 pm.

But now it’s 11 pm and we are hungry.

I check the fridge and there’s my leftover corned beef.

And I just bought bread from our grocery run.

😏

Corned Beef Meal 2:

Take out your sandwich press.
Put the bread, spread some corned beef over it. Then cover with another slice of bread.
Then press.

Wait until the machine says it’s ready or toast to your preferred doneness.

Don’t have a sandwich press?
No problem. Take out your nonstick pan. If it’s not nonstick, heat it up first.

You can also add some butter to the pan to prevent the bread from sticking.

Start with a low temperature and adjust as needed.

When the pan is hot enough, put the sandwich carefully.
You can either press it with a turner or if you have a heavy plate or bowl, something that’s heat resistant, like a square or rectangular serving dish, put it on top of the bread. Make sure it’s clean before putting it on your bread. You don’t want to be saying, “is that pepper? Wait, I didn’t put pepper!” 😆

Check every few minutes for your desired doneness. Then flip the sandwich to brown the other side.

I like mine more brown and crunchy on the edges.

Serve with tea or your favorite cold beverage.
If you’re feeling a little rebellious at 11 pm, serve it with some potato chips and a small sweet treat after. 😏

That can of corned beef sure is benefiting future you a lot.

Tomorrow we will transform our sardine leftovers.
