When we say de lata, most people think of protein—
sardines, corned beef, Spam.
But canned food isn’t just that.
It’s coconut milk, fruits, vegetables…
ingredients that quietly support a real meal.
Because at the end of the day, it’s not about eating ‘processed food.’
It’s about how you build around it.
I’ve been wanting to eat a coconut milk-based dish for the longest time, but my delicate system won’t allow it. I get gas and reflux pains.
But tonight, I thought of something to ease (not completely satisfy) my craving while keeping my digestive system safe.
Canned Coconut Milk Dish 1: Steamed Coconut Milk Rice
This is very simple to make. Prepare your rice like usual and just replace some of the water you use to cook it. I replaced 200 ml of water with coconut milk, so that it will still be gentle on my system.
I added salt, but you can skip that.
Set it in your rice cooker and you have delicious, fragrant rice in about 20 minutes (depending on how much you cooked).
Pair it with any protein you have - seafood, pork, chicken, beef, etc. This is especially good with grilled protein.
I paired it with green mangoes, bagoong (fermented shrimp sauce), and shrimp fritters.
