Homemade tortilla pizza and clam pasta. Both leftovers from different nights
There was a time when I believed that being a good mom meant putting something new on the table every single day.
Something freshly cooked. Thoughtfully planned. A little impressive.
I thought that was part of the job.
But over time, I started to notice what it was costing me.
The planning. The cooking. The effort to make every meal feel “complete.”
By the time I sat down… I was already tired.
And sometimes, I had nothing left for the rest of the day.
So I started doing things differently.
Not all at once.
Just… little shifts.
Some days, I reheat leftovers.
Some days, I cook the simplest thing I can think of.
And some days, I just put together whatever I have and call it a meal.
It’s not always pretty.
It’s not always “new.”
But it works.
And more importantly…
I still have energy left to live my life after I eat.
This is what my meals actually look like now.
Not perfect.
Just real.
Quick Irish Stew with rice and mashed potatoes
The photos are not Pinterest-pretty or Insta-worthy because this is real life.
A mom’s real life meals. And with so much to juggle in a day, most of the time, I just take photos of the food as they are.
Some days, I just need something light and fast while working at my desk and a salad with fruit, nuts, croutons, and protein is the way to go
Some days are too hectic that I don’t even care anymore if the dishes make sense together..or even if my utensils match.
Leftover beef stew, bacon, onsen yolk, kimchi. Do these make sense together? Nope. But was it delicious? Yes! Did it fuel me enough to tackle all my tasks that day? Absolutely!
Some days, I just need something sweet and cold and this fruit salad hits the spot.
I always cook a big batch of pasta so that we can have the leftovers for another day. Not cooking for one meal is such a blessing for me. I can concentrate on writing, creating, or simply rest, especially when Lady Flo is here.
And eggs are a Godsend. We always have a tray or two (about 30-60 pcs) every month.
They’re so versatile - we can eat them for breakfast, lunch, or dinner.
They go with many different dishes, in this case, chicken adobo.
They’re very easy to cook and can be cooked in multiple ways.
I used to think being a good mom meant doing everything from scratch.
Now I know…
being a good mom means having the energy to show up.
And sometimes… that starts with a simple plate of food.
