Desk Bento Diaries: Why I Pack a Bento at Home

Hello, everyone! It's been a while since I last posted. Thank you for your continued support by visiting my blog. Special shoutout to my readers in the US, Singapore, Brazil, India, and Venezuela! And of course, the Philippines!

You’d think that working from home means freedom to graze the fridge at any time, right? But here’s the plot twist: when you’re a writer, children's book author, homeschool mom, and creative running multiple blogs and businesses… you tend to view eating as a chore that you can push at the bottom of your task list.

I don't skip meals intentionally but when i'm in the zone, I do tend to wait until the very last minute until I get up and get some food. And when I say the very last minute, that involves dizziness and hand shaking. My brain is literally telling me,  “Hello? Glucose, please?”

That’s exactly what happened yesterday. I was exercising (lightly) again (yay!) and writing up a storm (double yay!), but then I found myself dizzy and weak, teetering on the edge of a flare. I ate a salad but that didn't cut it. I ate some leftover hokkien noodles that I made for breakfast the other day.  The noodles didn’t fix it . It took two almond chocolate balls to pull me back from the brink.

So I listened to my body. And my very smart friend reminded me: You need to graze. Frequently. Intentionally. Lovingly.

While he was telling me this, I was thinking, I should cook up a storm and have some food ready in the fridge so that I won't crash like this anymore. But that's a lot of hard work in a hot kitchen. And I am very sensitive to heat because of MCAS and histamine flares. So, last night, I happen to see this blog again and it hit me - BENTOS! Why didn't I think of that!

Enter Desk Bento Diaries — my new solution to a very real problem: eating enough, often enough, and well enough to support a body that runs hot, heals slowly but surely, and creates constantly.

Each bento is designed with care — not just for balance, but also for anti-flare support: protein to keep me stable, fruit and chocolate for quick energy, something green to ground me, and a little joy tucked in somewhere because, well, I deserve it.  Don't go expecting IG and Pin-worthy bentos though. I bento for survival, not for likes. But I would like to share them with you here in case you're a mom like me or a woman like me who juggles a million things daily.

And the best part?
These bentos are just for me. They live on my desk now. Just waiting for me to get a a bite or two before I crash.
Made with love. Packed with intention. Eaten at my desk while I build empires, guide my son, and heal — one delicious bite at a time.

Let’s pack lunch, shall we?

P.S. My son liked mine so much that he asked me to make one for him, too!
