This is What Happens When You’re French and Filipino at Breakfast

 



My French ancestors demanded rich, buttery, chocolatey indulgence… My Filipino ancestors said, “You can’t live on bread alone, hija - you need pancit!”

And so, I did. 

I woke up this morning wanting something satisfying. It’s been a while since I cooked pancit. 

By the way, are you Team Toppings or Team Noodles? I’m Team Noodles, but I want the right amount of toppings, too. In my photo, the toppings are just buried under the noodles.



I saw this brand of noodles from the grocery store last week. I thought I’d give it a try. I’m very particular with my pancit canton, as some noodles have a weird taste. Like oil that’s gone rancid. I rarely cook pancit canton because of this. Plus, I normally botch canton. 😆 I do! I should be ashamed because my grandmother made a mean batch of pancit that people raved about. 

Pancit is one of those tricky foods for me. It took me years to learn it. But I’m happy to report that I can now make a decent batch of pancit. 




I actually used 2 brands of noodles as I put too much water. I keep forgetting that canton requires less water than bihon, which is what I normally cook. I added Vietnamese egg noodles to this batch.


Pancit is one of those ‘don’t think about it dishes.’ And what I mean by that is I just add whatever’s leftover. Today it was a few pieces of shrimps, some rotisserie chicken, and some carrots and cabbage for the vegetables. I just sauteed those, seasoned, and mixed them into the noodles. 

This is easy to cook. The only thing that took some effort was chopping and washing the cabbage and prepping the shrimps. My other vegetables were already prepped, so I just took them out of the freezer. 


Oh, if you’re wondering if that brand is any good, my answer is yes. It was alright. It didn’t have that weird taste. It cooks really fast so watch it closely. The noodles are firm and don’t have too much starch that makes the sauce too thick. I liked that. There was a brand I tried that made the sauce too thick that the noodles got stuck together. Not for me. 

Will I buy this brand again? Yes, if I see it. I do my groceries at different places. If I’m not mistaken, I found this at The Marketplace.
