I didn’t cook japchae today.
I cooked it yesterday… without realizing it.
That’s the thing about how I cook now. I’m not just feeding present me. I’m quietly taking care of future me too.
Because if there’s one thing I’ve learned, it’s this:
My energy is not consistent.
Some days, I can make a full meal from scratch - tomato sauce, lasagna with a proper bechamel, garlic breadsticks, dessert. I can bake, prep, and still have energy to clean up after.
Other days, especially when the weather shifts, when it rains, when my body decides to be extra sensitive… I just want to lie down and disappear into my blanket.
Today was one of those days.
What I Did Yesterday
I made bulgogi.
Nothing fancy. Just a simple, savory, slightly sweet pan of beef with onions, and that familiar Korean flavor that always feels comforting.
But I made a little extra.
Not intentionally for a “plan.” More like… instinct. I’ve learned to listen when my body tells me, You might need this later.
So I let it sit in the fridge.
What I Did Today
Today, I had a frozen pack of japchae.
You know the kind. The “I’ll cook this when I’m too tired to think” kind.
I’ve been stocking these frozen meals more nowadays to help me when my energy is low.
Old me would’ve just cooked it as is.
But today-me?
She had yesterday-me backing her up.
So I heated the japchae… and added the bulgogi. π
And suddenly, something very simple turned into something that felt complete.
More protein. More flavor. More satisfying.
And most importantly…
less effort.
This Is How I Cook Now
Not perfectly.
Not elaborately.
But strategically.
I cook in layers.
I think one step ahead, not because I’m disciplined, but because I know there will be days when I won’t have the energy.
So I build little safety nets:
- Extra meat that can be reused
- Sauces that can carry another dish (like the leftover tomato cream meat sauce from last night’s lasagna)
- Meals that can evolve instead of starting from zero
Because feeding myself shouldn’t feel like a burden on the days I’m already running low.
Low Energy, High Impact
That’s the goal now.
Not “What can I cook today?”
But:
“What can I do today that will make tomorrow easier?”
Sometimes it’s as simple as cooking a bit more.
Sometimes it’s combining things you already have.
Sometimes it’s admitting you don’t have the energy… and working with that instead of against it.
Today, I ate warm japchae with bulgogi I didn’t have to cook from scratch.
And honestly?
That felt like luxury.
