Have you ever had one of those mornings when you’re just annoyed to prepare breakfast? Or you have a ton of things lined up for the day and preparing food seems like a troublesome extra task?
I have a few of those every now and then.
Especially on this day.
I was preoccupied with something that morning. And when I have something going on, my ADHD brain won’t let me break task until I’ve closed the loop (finished the task).
But my blood sugar was dropping and my son needed to eat, too.
So, I took a deep breath, told my brain that we needed to eat (yes, I talk to my brain. Don’t you?) and raided the fridge for leftovers.
There was pancit (noodles) and egg fried rice. I also found a tiny amount of leftover sizzling tofu. I reheated all of those, but figured that I needed one more viand to tie it all together.
Or at least have some extra protein.
So I made sauteed sardines, which I cooked in less than 5 minutes.
I just opened a can, sauteed some garlic and onions and added the sardines. I also added a little water to the can to get all the tomato sauce out and poured that into the pan, too. I seasoned it with salt and pepper and that’s it! Another dish that will allow me to be fuller longer.
I was that homemaker who was so hard on herself that she needed to serve freshly cooked food at least three times a day.
But that was exhausting.
And left the fridge full of leftovers.
It also took away a lot of energy and time, resources that are better spent on other more important activities.
I stopped being her and started loving and respecting myself a little more each day.
So what if we eat leftovers for all three meals in a day?
We got our money’s worth on the ingredients, I didn’t waste anything, and most importantly, I can continue my day calmly and still have the energy I need to write, to paint, to create.
The food may not be Insta-worthy, but it was perfect.
